Farmed along natural organic lines and from vines growing in stony soils of clay and limestone.

Harvesting: 

Hand picked.

Fermentation: 

Steel fermented on the basis of wild yeasts at temperatures of between 18°and 24°C, malolactic is also spontaneous, occurring when it has a mind to; the wine is gently racked afterwards and spends around 3 months on its lees. No sulphur is employed.

Stabilization: 

Clarification is effected with bentonite, stabilization by chilling to low temperatures, and filtration is with natural cellulose.

Colour: 

Lustrous green tinged pale yellow in colour.

Nose: 

Intensely floral in aroma, creamy and with lactic notes. Subtle and elegant. We at Menade always say that it smells of the first day of the harvest, of wet earth, must, grapes, and nature.

Palate: 

Rich and elegant, with impressive mouth feel, this is a wine that constantly intrigues with its ever so distinctive floral, rather bready, autolytic character.
